The color green is associated with the energy of the heart, meditation, nature, and the potency of life. Especially as it gets warmer one of my favorite treats is a raw and tasty green soup that only takes a few minutes to prepare.

Take 1 large cucumber sliced, 1-2 green onions
3 sticks of celery chopped
2 avocados
half a bunch of cilantro

Place them in a tall pot (if you have an immersion blender) otherwise put in a regular blender (split ingredients in ½ and make two batches as to not flood your blender). Add ¼ cup olive oil, 4-5 cups of water (depending how thick you like soup), juice from a lemon, and salt and pepper to taste.

Blend away until the mixture is soupy.

Garnish with cilantro and refresh!

Serves 3-4
