Whether I like it or not chocolate is one of my best friends in life and I am so grateful for our relationship. Some of you have heard me rave about this before, and its worth reminding the world about again, and again, and again.

Its a pudding, with chocolate, no dairy, no refined sugar, and a mystery ingredient that most folks won't be able to taste. Kids love it, adults ooh and aah over it, and your taste buds will truly believe they have arrived in heaven.

So how do you make it?

  • Take 3 ripe avocados (the mystery is revealed)
  • 3/4 cup of raw organic fair trade cacao powder (you could add more at end if needed)
  • 1/4 cup of maple syrup to begin or use 1/2 cup dates instead  (its best to blanch your dates in hot water for 30 seconds as this will make them easier to blend)
  • 1/2 cup almond milk or water (added slowly not all at once)

You might need less or more of any one of these to get the perfect consistency and mask the avocado taste. This is the base but feel free to get creative. Add mint, vanilla, fresh berries, or dried fruit...the sky is the limit.

Remember, avocado is a fruit so you are all set from a food combining perspective. The health benefits are plenty as well, but for today we'll simply focus on the delight of pudding.
