According to some, winter is a time for the sweet flavor, probably to provide a distraction from the cold. Well, winter is still in session, if only for 12 more days so its time to load up on healthy sweets.

Who said you can't have your cake and eat it too. There is no need whatsoever for low quality artificial sweeteners or refined sugar.

Celebrate sweets while still staying close to the source.

1. Vegan Pumpkin Pie

For the Crust
3 dates, chopped thin
1 cup cashews or almonds
1/2 cup walnuts

For the Filling
3/4 cup cashews or soaked almonds
1 can organic pumpkin or fresh cooked pumpkin
2 tbls coconut oil melted
1/4 cup maple syrup more or less depending on sweet preference
1/2 tbls cinnamon
1/2 tsp of nutmeg, ginger, cardamom, cloves

For crust chop all ingredients together in food processor. Do this on pulse mode as to not over pulverize. The dates will help the mixture hold together. Pour into square or round pie pan and pack down.

For the filling blend all ingredients in food processor until silky smooth. Pour into pan, evenly spread out, sprinkle the top with a dusting of cinnamon and nutmeg and refrigerate for one hour.

2. Date Tart

Replace the honey with maple syrup better for the winter months. Use goat yogurt to add a tart flavor as the dates are super sweet. Instead of walnuts try pecans and put some on top.

3. Chocolate Snow Balls

Replace the agave with maple syrup. Make it your own, add dried fruit, coconut flakes, chai spices, get creative!
