Apples are one of the g reatest joys of the autumn. From apple pie, warm or cold apple cider, or slices of apple dipped in sweet honey. In addition to all of these there is a mystery apple product that deserves a spotlight; apple cider vinegar.

When I first heard of apple cider vinegar I was confused as I really didn't understand what all the fascination was all about. Here are a few reasons it is so valued:

It helps increase absorption of important minerals (like calcium) when combined with other foods.
-Aids in lowering high blood pressure.
-Makes the body more alkaline and less prone to disease.
-Helps to break down carbohydrates from foods slowing the absorption of sugar into the bloodstream.
-Eases skin tension from sunburn.
-It also seems to clean tiles and showers well...who knew?

To enjoy Apple Cider V:

Mix 8 oz of warm water (warm enough to melt honey but not too hot) with 2 teaspoons of cider vinegar and 2 teaspoons of honey.

Pour 2 parts oil, 1 part tamari and 1 part apple cider in to a jar. Whisk or shake well and use as dressing on cooked greens or salad.
