One of the gifts of Autumn is the sweetness and color of winter squash. I think of the bright orange as an opportunity to savor the brightness of the summer season as we begin to move towards the darkness.

To prep squash cut one in half, scoop out the seeds, flip it over on a baking pan, and poke both halves with a fork or knife to ensure heat penetrates the skin more evenly.

Bake at 375 F for about 30 minutes or so until the flesh is tender.

Once the squash is ready, it is time to go get creative as to what you place inside of it.

A combo of veggies, fresh tomatoes and pine nuts, steamed broccoli, or cooked greens never disappoint.

Whichever you choose, sprinkle crumbled goat cheese on top to garnish before you serve.
